Chicken and Rice Casserole
Recipe from Phyllis Huspeth
Ingredients:
- 2 cups cooked and chopped chicken
- 2 cups cooked rice (cook 3/4 cup uncooked rice Suggestion: use whole wheat rice)
- 1 onion chopped
- 1 can cream of chicken soup
- 1 can celery soup
- 1 cup mayo
- 1/2 cup water
- 1/2 can water chestnuts chopped
- 1 pkg. sliced almonds
Directions:
- Mix all ingredients together and put in a casserole dish that has been greased or sprayed.
- Top with 1 /1/2 to 2 cups crushed Ritz crackers mixed with 1/2 stick melted butter.
- Sprinkle sliced almonds on top.
- Bake for 45 minutes at 350 degrees.
